Knoops Bristol: I visit the new luxury hot chocolate cafe to find out how it is ‘revolutionary'

After my initial visit to Knoops, the new hot chocolate shop in Bristol, I said I would not be back in a rush, after not being very impressed.         

But after an invite from Jens Knoop, the founder of the brand, I happily returned to the store on Queen’s Road in Clifton to try to find out how it is “revolutionising chocolate drinks”.     

Knoops has about 20 different % chocolates, all of which are available as hot chocolates, and six of which are available as iced chocolates and milkshakes.

These range from a sweet and creamy 28% white and classic 34% milk to a deep-flavoured 100% extra dark.  

It also has nine different dairy and plant-based milks and over 20 extras like sea salt, orange zest, chilli and cinnamon.

For Jens, making the perfect chocolate drink is an “art and a science” - a process he calls Knoopology.   

After only trying a 54% hot chocolate last time, Knoops was keen to find the perfect drink for me.

So I first tried the 60% and it was a tasty hot chocolate drink. As you would expect.   

I then tried the 65%, which I was surprised to find was more thick and fruity. I did not think a 5% change would have such a difference.   

I also just had to try the 100%, which was indeed very bitter but left the best chocolatey aftertaste.

The percentages all use chocolate from different regions of the earth, like the Philippines, Columbia and Tazmania - which is why each drink has its own unique flavour.

I also tried the 54% again, this time as an ice drink with orange zest, and it definitely was my favourite and one I’d have again.

The hot chocolates aren’t cheap, ranging from £3.75 for a small 28% white to £7.65 for a regular 100% extra dark, but Jens explains to me the price is based on how much it costs to source the chocolate, which varies from country to country. 

Knoops also only works with farmers who make a positive impact in their communities, with the chocolate sourced from a range of sustainable cacao growers and chocolate makers.  

I am glad that I returned to Knoops, and to have experienced Knoopology to find the perfect chocolate drink for me.
